Our olives are all naturally cured by traditional methods and are un-dyed retaining their natural colour. Some are slowly cured in brine and some are sun dried and stored in sea salt. When olives are preserved they are described as fresh for one year and all of our olives are fresh and most are harvested between September and the following January. |
